If you want to know how to soften fondant when it is dry, I will tell you today some tips and my opinion.

Surely, more than once, you have found your fondant hard as a stone or it is old fondant and you dont’t know how to soften fondant when it’s dry. 

It is normal, if it is not stored well (here you can see how to do it) or if it has been a long time, it becomes hard. You have done nothing wrong. Take note, that I leave you some steps to follow:

How to recover dried fondant

First we are going to do a test to see if we can recover it. There are two options:

1. Take that hard piece, tap it on the table: does it sound like a stone? Don’t bother then, throw it out. Here I tell you why it is better to throw it away, it is due to the sugar stones that appear.

And now option two:

2. You can squeeze the ball with your fingers, if you use a lot of force and it doesn’t move: throw it. However, if  it moves: then we can still do something with it. Check that when you split the ball in half it is still soft.

Once I have checked the state of the fondant, what I do is:

  • First, I examine if it has any very hard parts and cut them with a knife. But beware!! It is hard, you may cut your finger before cutting it. So do it on a table and ideally use a plastic knife. I use one of ibili. I remove all the hardness well because if not when modeling there will be hard parts or that cannot be handled. Here I tell you what happens with expired fondant and what happens with those sugar stones.
  • Then when I have removed the hard part, I start to knead. Finally, if I see that there is no way, then I use the microwave.

How to recover fondant in the microwave

  • First, I introduce it and give it heat strokes 5 seconds or 10 in 10. But BEWARE! Do not leave it any longer, it is better to stop and check. It is sugar, if you leave it too long, it will melt (and you will have to almost throw the microwave). Also, it will be very hot, like caramel. So we always go little by little. If you can, finish heating it with your hands, microwave dries it out a lot.
  • Even if you can, try to heat it with your hands first and if that is not possible, then use the microwave.

Remember that once we heat fondant, it will not have the same elasticity. It is likely to crack more easily as it has lost a lot of moisture.

Some people use crisco or glycerin to rehydrate it, try it and see for yourself. Personally, I think it is not necessary. I don’t like the result once we apply it.

How to soften purchased fondant

If you just bought fondant, and it is very hard, do not panic, it is normal.

First, take a piece and try to soften and warm it with your hands. Sometimes it takes time and effort, but in the end it is achieved since it will gain temperature and begin to knead better.

If you are still not able, then use the microwave, but, as I said above, it will make it dry out, so it is not the best option.
